In Klamath Falls, Oregon, is the strangest, best waffle I have ever tasted.
The menu front proudly told the story of the “Liege” waffle– which I thought was actually just a Belgian Waffle, but I could not have been more wrong.
It took a few bites to put our finger on it, but Liege waffles were denser and had a more satisfying texture than other waffles. It also had what felt inexplicably like crystals within them, every few bites. Turns out they have pearl sugar inside them– which, alone, might have been too sweet.
But Waffle Hut and Eatery paired the waffles with savory toppings like brie-and-egg, and a Mediterranean one with spinach, egg, tomato, salty feta, and olives.

5 stars– would DEFINITELY do again.
